The Luxury of Simplicity, Masterfully Executed

Sometimes the best memories happen without much planning. On our way to Werchter, we decided to stop for lunch and, thanks to a recommendation, ended up at Rossi in Leuven. One glance at the charming terrace, dressed with its classic red-and-white checkered tablecloths, was enough to know we had found the right place. It immediately felt warm, relaxed and unmistakably Italian. The welcome matched that feeling perfectly, genuine and heartfelt, as if you were stepping into the home of friends rather than a restaurant.

Inside, the atmosphere continues effortlessly. Rossi combines a contemporary interior with warm wooden accents, soft lighting and subtle Italian touches. A small open kitchen, a bottle of olive oil and sea salt on the table alongside excellent bread... There is no unnecessary luxury or fashionable excess, just an inviting space designed entirely around what truly matters: enjoying great food in great company. It is the kind of restaurant where people happily linger long after the last course has been served.

Chef Felice Miluzzi, awarded Best Italian Chef in Belgium by Gault&Millau, cooks according to a philosophy that has become increasingly rare today: the luxury of simplicity. Rather than impressing with countless components or elaborate techniques, he starts with exceptional ingredients and treats them with the utmost respect. The quality of the product always takes centre stage.

That philosophy is beautifully reflected in the tasting menu. Every dish celebrates seasonal ingredients and classic Italian flavours, interpreted with a contemporary touch. Each plate contains only a handful of carefully selected elements, allowing the ingredients and their flavours to shine. Acidity, sweetness, freshness and umami are perfectly balanced, while the Mediterranean summer runs like a common thread throughout the menu with ingredients such as peach, tomato, basil, aubergine, kumquat and cherries. The wine list is equally impressive, offering a carefully curated selection of Italian wines ranging from Alto Adige to Sardinia.

I opted for a Campari Spritz, which I personally prefer over an Aperol. Refreshingly bitter and perfectly balanced, it was an ideal way to begin. The first course paired roasted peppers, peach, basil and marinated mackerel. A wonderfully fresh and delicate dish where every ingredient had its own role without overpowering the others. The Tuscan panzanella with prawns and cherry tomato sorbet continued in exactly the same pure, flavour-driven style. It is remarkable how little is needed when outstanding ingredients are allowed to speak for themselves.

The highlight of the lunch? Without question, the homemade ravioli filled with buffalo mozzarella, tomato and basil. Pure summer comfort food. Perfectly cooked pasta, a creamy filling and that timeless combination of tomato and basil proving once again that simplicity is often the hardest thing to perfect.

The Iberico presa was equally impressive. The beautifully succulent pork was paired with aubergine, kumquat and mandarin, creating a dish that was savoury, elegant and once again perfectly balanced by bright, refreshing notes. It delivered depth and richness without ever feeling heavy.

For dessert, we stepped away from the tasting menu and ordered an Affogato instead. Always a winning choice, especially when excellent vanilla ice cream is topped with a rich, aromatic espresso. Sometimes, that's all you need.

Rossi is one of those rare restaurants where everything simply feels right. Every dish reflects genuine respect for the ingredients, the seasons and, above all, flavour. There are no unnecessary flourishes and no theatrics for the sake of spectacle: just honest, beautifully executed cooking that reminds you how extraordinary simplicity can be when it is done to perfection.

It is something the Italians have truly mastered.
