Van Oys Maastricht Retreat:
A New Benchmark for Luxury and Culinary Hospitality Just Outside Maastricht
When people think of Maastricht, they naturally picture charming streets, outstanding gastronomy and the Burgundian lifestyle the city has become famous for. But those looking to elevate their getaway don't even have to stay in the city itself. Just a ten-minute drive away lies Van Oys Maastricht Retreat, a five-star superior hotel that has quickly established itself as one of the Benelux's most prestigious luxury destinations.
As a proud member of The Leading Hotels of the World and recipient of two Michelin Keys, expectations are undeniably high. The question, of course, is whether Van Oys truly lives up to them.
If you're searching for one of the finest luxury hotels within easy reach of Belgian Limburg, this is an address worth knowing.
Luxury Begins Upon Arrival
The experience starts the moment you drive down the elegant entrance avenue towards the historic estate, where beautifully restored heritage buildings blend seamlessly with contemporary architecture.
Natural stone, warm timber, plush carpeting, expansive glass façades and carefully curated interiors create an atmosphere that feels both luxurious and remarkably serene. Everything exudes quality without ever becoming ostentatious or intimidating.
The guest rooms continue that same philosophy. Natural materials, calming colour palettes, exceptionally comfortable beds and sweeping views across the rolling Limburg countryside make it a place you'll happily linger a little longer.
Here, luxury isn't about extravagance: it's about comfort, tranquillity and understated refinement.
A Wellness Retreat - Almost Complete
Guests looking to truly unwind will appreciate the hotel's elegant wellness facilities. Multiple saunas, a steam room and beautifully designed relaxation areas provide everything needed for a restorative escape. There was, however, one element we genuinely missed: a swimming pool.
An ice-cold plunge pool awaits outside, perfect after a sauna session, but those hoping to swim a few lengths or simply spend more time relaxing in the water won't find that option here. It may seem like a small detail, yet at this level, a pool would elevate the overall experience even further.
A Breakfast Worth Waking Up For
Every morning began exceptionally well.
Without question, the breakfast is one of Van Oys' greatest strengths. Rather than overwhelming guests with unnecessary abundance, the hotel presents a carefully curated selection of premium-quality products inside a beautifully vaulted cellar.
Freshly baked breads, delicate pastries, artisanal cheeses, fine charcuterie, seasonal fruit, homemade specialties and à la minute hot dishes make for a breakfast that is difficult to fault. Guests can even mix their own Bloody Mary.
One particularly charming touch is the estate's own beehives. The honey produced on-site features prominently on the buffet and perfectly reflects the hotel's commitment to local sourcing and sustainability.
It is details like these that often distinguish a good hotel from one with genuine character.
Two Evenings at Restaurant Maes
During our stay, we had originally hoped to dine at Create by Guido Braeken, the hotel's two-Michelin-star restaurant. Unfortunately, our visit coincided with its closing days on Monday and Tuesday. That disappointment quickly turned into an opportunity to experience Restaurant Maes on two consecutive evenings.
Chef Milan presents a contemporary cuisine rooted in regional produce, seasonal ingredients and refined techniques. This becomes immediately apparent the moment the dishes arrive at the table. Every plate is beautifully composed and demonstrates impressive technical precision.
Among the highlights were an elegant oyster, followed by kingfish with yuzu, cucumber and green herbs: a wonderfully fresh dish where every flavour found its perfect balance.
Chef Milan's signature steak tartare also impressed with its finesse and meticulous execution.
Not every course reached that same level, however.
The duxelles of locally grown cave mushrooms, for example, could have allowed the mushrooms themselves to take centre stage. Personally, I would have preferred them served more naturally. The generous amount of black truffle overshadowed much of their delicate earthy flavour.
The same applied to the cappelletti with veal jus, black truffle and confit egg yolk. Once again, the truffle became slightly overpowering, leaving the dish feeling a little too rich and somewhat overworked.
Without question, the standout dish across both evenings was the Limburg trout from Commanderie 7, served with horseradish, parsley and trout roe. The cuisson was impeccable, the flavours beautifully refined and every element worked in perfect harmony. For us, this was the finest plate of the entire stay.
The main courses, Including sweetbread with picanha, sauerkraut and bay leaf, sea bass with beurre noisette, capers and fennel, and Berugi beef tenderloin with wild mushrooms and veal jus, were all technically accomplished.
Desserts, ranging from strawberries with elderflower to dark chocolate with dulce de leche and a classic Dame Blanche, provided an elegant conclusion.
Yet after two dinners, one consistent impression remained.
The kitchen clearly possesses considerable technical expertise. Excellent ingredients, refined cooking methods and beautiful presentation are evident throughout. However, this craftsmanship did not always translate into equally memorable flavours.
To be clear, we genuinely enjoyed every meal.
Some dishes, however, felt a little too cautiously seasoned or lacked that final spark of excitement that transforms a very good dish into an unforgettable one.
A little more confidence, a touch more simplicity and, occasionally, a little more seasoning would elevate this kitchen even further.
Maastricht and South Limburg at Your Doorstep
Van Oys also serves as an ideal base for exploring one of the Netherlands' most beautiful regions.
Maastricht lies just ten minutes away and remains one of the country's most atmospheric cities. Wander through the charming districts of Wyck and the Jekerkwartier, visit the breathtaking Dominicanen Bookstore housed inside a former church, enjoy a drink on the Vrijthof or browse the luxury boutiques along Stokstraat.
Nature lovers are equally well catered for. The Meuse Valley, Sint Pietersberg, Eijsden, the Voer region and Valkenburg are all within easy reach, while the rolling hills make the area a paradise for walkers, cyclists and road biking enthusiasts.
Hospitality Above All
Perhaps what stayed with us most was the genuine warmth with which every guest is welcomed. From reception to restaurant service and throughout the wellness facilities, every interaction reflected not only professionalism but sincere kindness.
That authentic hospitality accompanies you throughout the entire stay and, unfortunately, has become something of a rarity in luxury hospitality. In the end, it is precisely this human touch that makes the greatest impression.
Our Verdict
Van Oys Maastricht Retreat succeeds in combining international luxury with the warmth and charm of South Limburg. Its beautifully designed rooms, elegant wellness facilities, outstanding breakfast featuring honey produced on the estate and exceptionally friendly service make it a destination we would happily return to.
Restaurant Maes undoubtedly showcases impressive technical skill and enormous potential, but in our opinion it could occasionally benefit from placing even greater trust in simplicity: and above all, in flavour.
These, however, are relatively minor observations within what is otherwise an exceptionally complete and highly enjoyable stay.
Aad Approved! for the hotel, its facilities and its hospitality. Slightly less so for the culinary experience.
